Paneer Simla
Requirements:
large skillet with lid (those glass ones are amazing)
cutting board
sharp knife for... cutting... green peppers!
something to stir contents of skillet with, that won't melt or scratch it (good luck)
a stove

Ingredients:
8 oz cottage cheese
2 green bell peppers
4 crushed garlic cloves
2 tablespoons olive oil
1 teaspoon red chili powder
1 teaspoon coriander powder
1 teaspoon garam masal powder
3 tablespoons canned tomato puree
a dash of each salt and sugar (optional)
Notes: In case you were wondering, this is a wonderful Indian dish. I like to serve this dish with
basmati rice and naan bread. I usually purchase the naan bread from Whole Foods, which the
rice can be found at any major grocery store.
This dish is so good, I have often said that I'd like it to be my last meal.
